It does take time, but gaining it usually didn't happen overnight either. As for not eating as much as usual: true for calories but not necessarily for volume. Most of us didn't gain weight by eating veggies so if you switch out some of the more calorie-dense parts of your normal diet for less calorie-dense options you can eat just as much as you're used to while losing weight.
