Little improvement after training

My wife (25 yrs old) has been trying to become more active and fit. Most her life she didnt do any activities or sports, but she is not overweight (5'3" at 100 lbs).

For the past year she has been going to the gym regularly 3 times a week doing some light weight lifting and using the elliptical or stationary bike. In addition, she has been hiking regularly 2-3 times a week, ranging from shorter hikes of 10K to longer hikes of 30K. She also eats fairly healthy.

However, now that a year has passed, she is greatly disappointed with her results. She is still not able to run much more then a few minutes. She is still struggling with the uphill climbs in hiking. She is not getting much muscle buildup. And overall, she does not feel that much more fit.

We know that she is more fit, because she is doing more then she ever used to be able to. But it just doesn't seem like its proportionate to what she has put forth this past year.

When we do hikes together i see her struggling when im perfectly fine, and it really confuses us. I used to be very fit when i was in high-school, but for the past 15 years ive done ZERO activities and have let myself go big time. So I should be the one struggling, not her.

Anyways, was just curious if there is any advice to help speed up her training, or certain exercises to do to help her gain that confidence and fitness faster?
 
What is her diet, and how much sleep does she get? Training, Diet, Rest. If even one of those is lacking, her results will suffer dramatically.
 
+1 to the diet connection. At 100 pounds your wife is underweight based on the charts. I mention this because what may be holding her back is her calorie intake. If she isn't eating enough then she will not show improvement and will tire quickly on hikes. My recommendtion is to start wth a thorough evaluation of her diet and determine if she is getting adequate nutrition. A discussion with her doctor or a nutritionist may be the best route.
