I love lima beans. And I mean: love. At least once a week I'll replace dinner with a nice bowl of lima beans, usually about a cup or so. Filling and delicious.

My problem is, I cover them in butter. And I mean a pool of butter that is still in the bottom of the bowl by the time I'm done. I already started a thread about butter alternatives, but do you flavor your lima beans with anything else?
 
Most any vegetable I'm perfectly content with a few different condiments...

garlic - always garlic.. :D

Balsamic vinegar (not vinegarry at all - ages like a fine wine- gets sweeter)
rice wine vinegar
olive oil
italian dressing
ranch dressing
soy sauce or teriyaki sauce
 
if you try the balsamic (and I suggest you do! Soo sweet & yummy!) make sure you get a very good one. We've learned our lesson at my house, we tried the cheapest one - SUCK! Make sure is says made in Modena somewhere on the bottle. They produce the best - real barrel aged vinegar.

As for your lima beans - this is a very good recipe that uses chicken broth and onion to flavor. Only .6g fat per serving.
 
hmmm....I'll try both of those ideas. I think i have everything I need for the broth lima beans at home right now :)
