Weight-Loss Lentil Beans

I am trying to incorperate more Fiber in my diet. My doctor suggested beans. I am not a big fan of beans but I'm willing to give it a shot. It sounds like Lentils may be a good start. I would like to know a low calorie but tasty way of making these as a side dish with chicken and a veggie.

Keep in mind that lentils arent a real low calorie food -they are a good source of protein, very low in fat and high in fiber, so they're good for you- but you do have to pay attention to portion sizes
 
High is relative...

They are satisfying and pack a big nutrition punch - so don't be afraid of the calories...

1 cup of uncooked pink lentils - which makes about 2 cups cooked, is about 600 calories and 21 grams of fiber (almost an entire days worth)

The lentil salad recipe I posted used 1 cup of cooked lentils (about 300 calories) plus a b unch of vegetables added in w/ a nice vinagrette dressing.. serves 2 healthy portions... as a side dish or as a lunch...

I love beans - they're versatile and cheap... and really good for you...

especially nwo that we're going into cooler weather and i can drag ou the crock pot

This is true. I actually try to stay away from them.

Staying away from them isn't your wisest move -they have a ton of good nutrition... protein, fiber, lots of good things your body needs -and they are filling... and economical. you just have to be mindful of portion sizes..

Bingo. For what you get nutritionally speaking, there are few foods that are a better source of fiber and/or protein.
 
Thanks so much for the lentil salad recipe. I'm going to give it a shot. I have some lentils that have been sitting in my cabinet for a while.
