Is this a safe running plan?

Now that its the holidays i can run every day.

Im running 3k then 2k then 3k and so on for 1 week then im going to increase the distance.

Is this safe for my knees?

yuou dont tell us much abotu yoru knees.

nor do you tell us how fast you plan to run

but- i will say that if you do not have rest days, your running performance will not improve as well as it could. 2 consecutive days of "running" is good, but 3 is not so good - again, depending on how hard you run. If you are just out recreationally jogging you can do that daily.
 
For the average person, yes. Your knees should be perfectly fine. However, you did not supply us with much information, so its hard to make an accurate judgement about you personally.
