Sport In need of Diet Help.

As I posted in my introduction I'm really looking to get into power lifting my main goals aren't to really look good as I have no confidence problems I just need to know how much I should eat and what I should eat.

Stats- 5'9" or 5'10" and 310 pounds.
 
Alex, don't take this the wrong way but at 310 lbs you should stop eating! Seriously, I wouldn't start any kind of workout program without medical supervision. That weight level is putting a lot of stress on your joints and heart. Diet time!
 
Have absolutely no problem sticking to Atkins or any diet generally. Im looking to lose about 13lbs and have lost around 3lbs so far in the last 9 days. Problem i have is that those 3lbs were lost in the first 3 days and every day I’ve gone to bed about 3lb heavier from the water and food and wake up the exact same weight, as I was the previous morning. I have been in a deep stage of ketosis every day, so if im burning fat I don’t know where it’s going! My diet is purely lean meat, 2 eggs a day. 3 ounces of cheese, 2 cups spinach, 1 cup asparagus and 3 - 4 liters of water. I’ve attempted to cut out cheese as I read it may stall, but this hasn’t made any difference. Does anybody have any idea why this weight wouldn’t be coming off, not even a small amount? Im happy to give it another week before i start rethinking my options, as i do enjoy the diet, but don’t mind swapping to general healthy eating again if it fails to work. Any help is very much appreciated.
