Staying on track with a healthy diet is difficult when there's very little that is suitable for me to eat.

I've been vegan for the last little while. I made the choice to switch to this lifestyle because of my beliefs but also because I find it much healthier, and I feel better physically when animal products are not part of my diet. The thing is, once I started getting off track, I couldn't get my habits back together... and even worse, when I fell off the wagon and ate meat or dairy, it made me feel not only fat, but sick.

So, I need to get back into the habit of cutting out meat, dairy, eggs, and so on.

I've also had other health problems lately and it's been suggested that I cut wheat and gluten as well as foods with added sugars from my diet... sounds like it would be beneficial to my health, but after those things are gone from my already supposed-to-be-vegan diet, there isn't a lot left for variety!

Basically, I need some tips on how to get started on this plan. I'm sure that if I can start eating without all these things I'll catch on and it'll get easier, but for right now, I need some tips to help me out!

And any ideas on what I can eat would be great too... :p

Hi! I just had to respond to your msg, and as a fellow vegan I know what you mean. What works best for me is finding things I truly LOVE to eat. ie: some soy, rice, almond milks taste gross, but I tried soy dream, and its great! Don't be afraid to really look, make it your quest to find alternatives to things you liked before, its fun! So, first of all, get yourself a copy of "The garden of Vegan" or "How it all Vegan" by Tanya barnard and Sarah Kramer. I have lots of vegan cookbooks, but I only use this one. Next, stock your kitchen: Try your local health food store. And then, dig in! Remember variety its the key, try to have at least one fortified food or drink a day (ie soy juice, milk, yves veggie "meat") That way you know youll be gettting enough B vitamins, calcium, protein etc (key to losing weight, you may even want to take a b complex vitamin) If you like chocolate milk, try natura chocolate soy milk, its delicious, I just discovered it! And remember, since you're eating more fruits and veggies, your diet will be bulkier (read: it seems like you're eating more calories than you are) don't worry.

I have those cookbooks... and they're so good! The third one came out a while ago, too... "La Dolce Vegan", I think? It's also pretty awesome, but it's only by Sarah Kramer.

I always keep some basics in my kitchen.

Nutritional yeast
Peanut butter
Several cans of various beans
Braggs Aminos
Bags of Frozen veggies
Canned or Dried Lentils
Brown Rice
Oatmeal
Whole Wheat noodles
Salsa
Whole Wheat Mission Tortillas
Organic tomato sauce
Dried, fresh and frozen fruit
Silken, Firm Tofu
Soy Milk
Earth Balance Butter
Yams

Thats a start. What I did to learn how to cook... I went to Vegweb. They have tons of vegan recipes and reviews and some tips about the recipes.

Always make sure you get enough of your protien, iron, Calcium, and B vitamins. It's easy to follow a great vegan diet by using a variety and researching foods. Once you know how much of "what" is in certain foods, it's easy to keep track. No need to worry!
