Let's see .. what's high in fat.
1 slice of regular white bread, toasted, with 2 tbsp of
regular peanut butter.
2 slices of regular white bread, un-toasted, with broccoli fried in
2 tbsp of oil, with garlic powder seasoning (made into a sandwich with the bread)
1 cup of iceberg lettuce with fat-free italian dressing, and
1/4 cup of shreeded cheddar cheese on top
None of those things are bad individually. When they're ALL YOU EAT - it sucks.

I will disagree slightly with Jynus about the olive oil. It has to be heated at a FAR higher temperature to "convert" the fats. Cooking with olive oil is not unhealthy as far as that goes, but it does have a low smoke point, so you're better off cooking with a combination of olive and canola oils.
2 tbsp of olive oil in one meal is, IMO, excessive. There is very little need to use that much oil in one meal for one serving. That's 240 calories in oil out of a total of 560 calories. That's over 1/2 your meal in fat calories. Too much by far.
