Register at some place like fitday.com or thedailyplate.com and you can enter in what you eat and get a pretty accurate calorie count.

However, I will say if the above is what you plan to eat, I can tell you right now that it's not enough calories and it's very poor in nutrition. It's probably well under 1000 calories, and high in fat and carbs and very very very low in protein. Not good at all.

I took the liberty to highlight the part of that diet that wasn't trash.

You might need to overhaul your diet a slight bit if you're actually considering that to be your daily intake of calories. In a word, that is horrendous what you posted. (aside from broccoli)

lean meats, complex carbs, unsat fats should be the bulk of your diet. very little of what you posted met this requirement. the oils used to fry might be good for you, but it depends on how you use it. high temp frying should only be done with coconut oil. medium temp can be done with canola.
 
I use extra virgin olive oil to cook broccoli.

poor choice. olive oil has weak bonds, so the healthy part of it (the unsat fats) are easily broken down by heat. meaning that all the health benifits of the oil is lost due to being transformed into saturated fats from the cooking process.

the fats in you meal choices are
oilive oil (which is a good fat, but only if eaten uncooked like in a salad)
cheese (basically pure sat fat)
peanut butter (regular is pure trans and sat fat. use natural for it to be healthy)

i added it up, and you're getting aprox 500 calories in sat fats. which is like 5 times what your daily intake should be.
 
Let's see .. what's high in fat.

1 slice of regular white bread, toasted, with 2 tbsp of regular peanut butter.

2 slices of regular white bread, un-toasted, with broccoli fried in 2 tbsp of oil, with garlic powder seasoning (made into a sandwich with the bread)

1 cup of iceberg lettuce with fat-free italian dressing, and 1/4 cup of shreeded cheddar cheese on top

None of those things are bad individually. When they're ALL YOU EAT - it sucks. :)

I will disagree slightly with Jynus about the olive oil. It has to be heated at a FAR higher temperature to "convert" the fats. Cooking with olive oil is not unhealthy as far as that goes, but it does have a low smoke point, so you're better off cooking with a combination of olive and canola oils.

2 tbsp of olive oil in one meal is, IMO, excessive. There is very little need to use that much oil in one meal for one serving. That's 240 calories in oil out of a total of 560 calories. That's over 1/2 your meal in fat calories. Too much by far.
 
While we're at it, white bread is an awful choice for nutrition. You want 100% whole grain. Also, iceberg and romaine are not the best choices for greens from what I've read. Darker greens and reds are supposed to be the way to go. Think more like a spring mix tossed with spinach greens, a light sprinkling of walnuts, a healthy dressing and a light sprinkling of parmesan or 2% cheddar when you think of a salad.

this appears to be true. Once again ptonthenet fails. Sorry, I was basing that info off of the personal trainer resource we use and it was spelled out in a post about cooking with oils. I always thought that it didn't matter, but the resource talked about why different oils should be used for different temps so I took it for face value without looking further. My bad. Kara is right on this one. long story short, nutrition wise, olive oil is fine to cook with. however taste wise, it might be a different story....
