yeah ok, As soon as you start using that thing above your eyes.

I guess the marbled part is fairly obvious, so my question is more about the toughness and if that has any relation to the amound of fat. I get it at the local outdoor market, so there is no labeling.
 
I think toughness can be an indicator, but then filet mignon is relatively lean and it's incredibly tender. I just look up the particular cut on fitday or calorie king or just do a google search like "beef top sirloin nutritional information" and you can find an average

Fortunately, the meat market where I go, package the calories, etc, on the packaging material, and I usually (when I do eat beef, which is rare) just go off of this. I dont have a special reason to stay away from beef, I just love my chicken, tuna, etc.

What are you trying to aim for? Less fat in general? Or just specifically the saturated fat?
I'm looking for lowest saturated fat. The kind i get now 'seems' lean. It's like a fillet with virtually no visible fat or marbling and slightly tough but good taste. Very little dripping when cooked.
