Hi everyone...

I've decided that I would like to get in shape.

I don't have a goal weight or anything set, I just want to be healthier and rid myself of some jiggly spots.

(My husband, who is in the Military has been reserve (packed a beer belly on), but in Feb. decided he was going to re-enlist into some more 'hardcore stuff" and he has been working out and he looks great! I can feel his muscles getting tighter- It's really got me thinking about myself!)

Aside from trying to be more active (Buying and Elliptical and a gym membership to start) I would like to eat healthier.

I cut back drinking soda and won't buy it for the hose anymore. I maybe have 1 or 2 a month on the high end. (I used to drink at least 1 a day)

I've stayed away from sugar. (I used to eat candy like it was air)

I'm also trying to not eat out as much etc...


BUT- I'm trying to figure out how to eat healthier AT HOME without boring myself.

I am a great cook, and love doing it...so that's not a problem...

My problem is that I am allergic to many vegetables and fruits- so it limits my ability to eat those things.

I'm afraid if I make the same stuff over and over with what I CAN eat that I will just get bored of all the ingredients and order out for pizza or something.

I love flavorful, robust meals- Things with lots of full flavored ingredients... I am so afraid I will think everything 'healthy' is too bland. Even my favorite salad from my fav. restaurant has cheese, and salami on it; topped with the best ranch dressing I've ever had!

(examples of some things I am allergic to are Carrots, Parsnips, Celery, Pineapple, Strawberries, Apples)


Help me! Am I being too stubborn? Can I still eat healthy without a lot of fruits and veggies?

You know, I wasn't a big fruit / veggie eater before I started on this journey. It took about a week and I sort of acquired a taste. Enough time off of sugar and starchy over-processed foods, and your body starts to crave the good stuff.

The best rule of thumb is, if someone 100 years ago could get ahold of it and eat it, it's probably fairly nutritious. Anything processed and over-packaged has lost much of its nutrition in the processing and packaging process.

Start with what you CAN eat, that is healthy. What vegetables can you eat? What fruits? Can you change your bread to whole grain breads? How about nuts? Beans? Dive into a whole foods cookbook (I like Whole Foods for the Whole Family)

I'm still new to all of this, and discovering a lot about what I've been putting into my body. It's been eye-opening!

Visit the spice aisle and go nuts - you wil lget tons and tons of flavor.

I will not eat boring foods - I like flavor and can get flavor without adding in cheeses or heavy cream laden sauces... just experiment...

I love veggies and fruits! And I HATE being allergic to so many of them.. I can't pinpoint what it is either.. Acids in them or something? Occasionally I will CRAVE one of them an eat them anyways...and chase them with a lot of water and something coarse (bread/crackers/cereal)

I have to go grocery shopping today, so I'm gonna pay more attention to the produce (How do you shop or fresh produce? Making sure it doesn't go bad before you eat it??)


Maleficient-- What are some of your favorite flavorful things to eat? (Just fishin' for ideas :) )
 
i live alone so I tend to do a lot of chicken breasts, salmon, fresh tuna, lamb and beef occassionally (as long as there's no bones in the vicinity it's good)

Mushrooms of all varieties, broccoli, zucchini and sweet potatoes are my favorite veggies but asparagus will do any time - roasting is my preferred method iwth a hit of oliveoil and garlic

or spinach - spinachis always good with garlic.

my spice rack always has cumin, ground coriander, curry and a few others - garlic is always around too and fresh cilantro and flat leaf parsley.

Using low fat ricotta or cream cheese -I can create a creamy sauce - with minimal calories and fat... low sodium chicken stock or vegetable stock can create a lighter sauce.... for over various grains...
 
I personally put hot sauce on my eggs, Montreal Steak Seasoning on my chicken for some basic improvements in some otherwise tasteless meals. Cooking the same thing differently also works for me. If I put chicken on the Foreman, it tastes different than baked, which also tastes different than grilled. That is one of the ways I've tricked myself into eating the same thing when I have no choice be it finances or time or having to cook more than I'll eat because two people shouldn't consume 2 lbs of meat ;) . fresh lemons are also really good for squeezing on salmon or chicken just as it commes ou of the oven.. low sodium soy sauce has lots of flavor

Any salad dressing makes a great marinade for chicken breasts -I will drop the breast and the dressing in a bag and stick it in the freezer on shopping day -when i pull it out for dinner later in the week - when it defrosts it's marinated...

wasabi is also great for soome added kick
 
im curious what your symptoms are when you eat the produce you are allergic to?! that would be HARD!!


whole wheat pasta with tomato sauce and frozen spinach, ground veggie meat if you like that flavor...try it...my husband is a hunter and im vegatrian and he eats it. just brown the veggie meat before adding to sauce (5 min maybe)

veggie stir fry....broccoli..anything you are not allergic to and coat in sweet and sour sauce..with chic if you like that and brown rice...yeaf sauce high in calorie but its a step!!

just some starter ideas....try veggie spicy chik lunch meat on your salad with balsomic vinegar and little bit shredded cheese.....

i go to recipezaar for vegan or vegggie recipe...maybe try that
 
Oooh! Lots of ideas!

I hit up the produce and got, beans, asparagus, scallions (for with meats) zuchini, squash...cantaloupe...

Then some light yogurt for snacks.

I'm marinating chicken overnight...

Etc.

My parents bought me a spice rack last Xmas. I'm gonna have to start using it :)

(And my allergic reaction can range from one or all of the following: Itchy/Scratchy throat, tongue, and lips....Swollen and/or burning lips...Swollen tongue...Hive like rash...etc.

My worse reaction EVER was Bing cherries. My tongue swelled up so fast, and so much that I had to take my tongue piercing out as it was about to exceed the length of it and make it pull through. It was about as hard as a potato. I thought I was going to go into Anaphylactic shock.)
