Help With Some Exercises - Not looking to be superman!

Small bit of background: I've always been a big person, since the age of 14. I ballooned up to around 21 stone and was hovering around the "20's" all throughout my 30's until one day, something twigged. Despite trying to lose weight on and off using Slimming World and gym at various times, in January of 2017 I decided to take control.

Now, I'm not saying this was the BEST solution, but it worked for me. I used a ketosis-based very low calorie diet for 6-7 months (with the relevant safety gaps in between) and lost 7 stone! I don't think I've ever been as happy with myself as sticking to something like this.

However, whilst I'm not in full on maintenance mode, and have managed to maintain a static 14 stone (doesn't look bad on me to be fair) I'm struggling with a few things.

Saggy skin isn't an issue. I knew I'd have some, I do have some. My issue is that nowI'm eating "normally" again I am struggling to keep "fat" off certain areas. My stomach has increased in size again despite 3-4 days of cardio at the gym. Yes I'm eating carbs again now, but often don't go over the RDA for a calorie intake I'm sticking to of just under 1600 per day.

Any tips and tricks as I've been maintaining for a year but this has me slightly worried going forward - I need to get a handle on it and monitor and counteract if possible, the above.
 
As you age your metabolism slows down, and whichever way you calculate your calorie limit, it will always be just an estimate unless you have it measured in a lab.

As for your exercise, you cannot exercise away a poor diet, however, what type of cardio are you doing? intensity ? and are you doing any other forms of exercise ? as you exercise selection will have an effect on your body composition combined with diet.
