I made this tonight and it was awesome. Here's the nutritional breakdown:
500 calories
76 g protein (60% of calories)
10.5 g fat (19% of calories)
3.9g saturated fat
28 g carbs (22% of calories, virtually all complex carbs)
4oz scallops (approx 16 small ones, frozen from wal mart)
1 cup medium shrimp (cooked, frozen from wal mart)
3 oz salmon
Asparagus, fresh
Zucchini
Onions
Water Chestnuts
Mushrooms
Carrot, raw
Cut up veggies, thaw all seafood, in non-stick pan with smart balance spray put in salmon filet, scallops, water chestnuts, and carrots. Let these cook for just a little bit and add the remainder of items. Dash with soy sauce and spices to taste. The moisture from the items simmers everything nicely. When done to taste (al dente for me), drain off remaining liquid and serve.
Awesome dish and a plate full of healthy food with lots of flavor. A protein rich meal.
