Weight-Loss Healthy or Not?

I have been eating the following healthy foods:
lean protein (chicken, fish, or tofu only)
sugar free protein meal bars
lowfat/nonfat dairy
whole grains

I take vitamins as well. However, my diet is seriously lacking in fresh fruit and veggies. I just don't like them raw and don't know how to prepare them. My question is this: How bad is my diet? Can I be healthy on what I eat, or am I lacking stuff by not eating enough veggies? I eat a lot of fiber in my grains and atkins bars.

Also, how do you incorporate more veggies without adding a ton of work in preparing them? What do you all do?

easiest method of preparig most any vegetable so that it tastes good,a d doesn't taste like the crap from acan... is to roast them...

Cut the vegetable up into chunks, sprinkle a bit of olive oil (for flavor) , black pepper ad salt if you like, some garlic if you like (and if you don't what's wrog with you) and but in a toaster oven or real oven for about 20 minutes til the veggie turs bright green...

Veggie is crisp, ad has tons of flavor... for an added kick sprinkle on some fresh grated parmesan cheese...
