Luckily, I only have to drive to campus twice a week, but I rarely take time to pack a fresh lunch before I leave. Other than Romaine salad which 1) I get tired of and 2) is VERY expensive here, the only food available on campus is greasy, high calorie, high fat and/or simple carb.
I try to keep food in my desk drawer that that fits my eating style: low fat (undrer 10%) and calorie, low protein, sugar free (or very low sugar), high complex carb and high fiber.
Today, I ate (or should I say choked down) Nile Spice brand Black Bean soup--just add boiling water. It was awful--bland, gritty, thin with random clumps. I'm a food person. I fully believe food can be good AND healthy, but I usually cook for myself. I don't know much about convenience foods.
Can any one suggest some shelf-stable stuff I can keep in my desk drawer for those days when I don't bring anything from home? And, please, can it taste good?
