Flexability goals?

This isn't specifically weight loss related, but I was just wondering what some realistic flexability goals would be. I do a quick stretch five minutes into a workout, and then a more complete stretch after I'm done. I realize I'll probably never be able to twist myself into a pretzel, but will I ever be able to touch my head to me knees with my legs straight out in front of me? Or has that shipped sailed? Anyone have any thoughts on this?
 
I think that sort of thing really does depend on everybody individually... what weight you are, how naturally flexible you are (for example if you were double-jointed I'm sure that would go a long way!) I should think your frame and build would also play a part.

I for one would never aim touch my nose to my knees because it's all-too-easy to hurt my back and I don't even wanna try it.

If it feels comfortable and you work up to it gradually and are able to do it then fine, but the only way you're gonna know if you can do it is if you try I guess.
