Last sunday I have enjoyed my evening with my friends. we have made Mexican Bean Salad at home. I would like to share this dish with you. Very nice it is.........
1) Four Eggs
2) single bunch of coriander leaves
3) halved punnet cherry tomatoes around 250gm
4)1/2 tsp cumin and one red chilli
5)finely sliced onion
6)400g beans
7) 2 avocados peeled
Boil the eggs in water for around 7 minutes and then put them in to cold water.slice the avocados and put them in a bowl with onion, beans, coriander and tomatoes. Take 3 tbsp of the dressing and mix with chilli and cumin. take a Eggs which was kept in water to cool and remove their shell and cut in to small pieces. Toss the salad with the dressing and nestle in the eggs. Then serve it with toasted tortillas.
