and if you lose a yolk into the bowl and don't need it, use clean fingers to gently remove it.
I always do my whites first, in case I break a yolk trying to separate them. not real common, but i'm not exactly 'delicate' at 7am in the kitchen
lol, Malk...somehow you and delicate don't seem to go together in my head. I typically just crack the egg and let it fall into my hand and let the white part slip through my fingers. I rarely have any trouble with getting any yolk in the pan.
