Hey everybody!

I need some advice about Easter dinner.

My husband and I have not been eating meat for Lent, and we have been looking forward to a delicious Easter dinner when we reintroduce meat to our diets. This is what I would traditionally make for Easter dinner:

Deviled Eggs
Honey ham
Mashed Potatoes
Green bean casserole
Dinner rolls
Berry Pie

I’ve already decided to do mashed cauliflower in place of potatoes, but I wouldn’t mind some advice on the others. Is ham worth it, or should I change to chicken? Anybody know any low-cal options for deviled eggs? Or how about the others?

My doctor has me on 1200 cal/day, so I really can’t afford a meal like the one I described above :-/

I don't know about fitting these into a 1200 calorie diet (that'll be a real stretch), but I just searched my favourite recipe website for low kilojoule (it's an Australian website- they use kilojoules rather than calories) recipes with berries, and the following are under 200 calories a serve (which isn't ideal in the circumstances, but it's usually a lot to ask of a dessert):

(149.2 calories per serve)
(132.1 calories per serve)
(146.2 calories per serve- sadly, I think that's per brownie)
(116.6 calories per serve)
(195.2 calories per serve)

Or maybe just a bowl of berries with a little bit of other fruit so it's a bit sweeter? It's not the same, but berries are quite low calorie and you could save yourself some calories there.
 
I don't think that ham would be that huge of a difference from the chicken, especially for one day.

Only tip I have on the deviled eggs is you could maybe use some fat free greek yogurt in place of the mayo... really, an egg is an egg and you can't make it with egg whites only ;)

The green bean casserole is probably also a calorie trap - maybe consider having some sort of steamed veggies instead?

For 1200 calories... yikes! I'd probably just eat ham, maybe bake some sweet potato, have a few deviled eggs and whatever veggie and then a bite of dessert? (Or the berries with honey or something)

Then again, for Thanksgiving I usually load up on the turkey & veggies and then allow myself one bite of everything else I want to taste and call it good. ... Are you eating anything else the rest of the day? ;)

Why not just let yourself enjoy a nice Easter dinner with your family, without worrying about the calories? You can't deprive yourself all the time. I've learnt this the hard way.

Just enjoy yourself for the day with your friends and family, enjoying delicious food. As long as you go back on track the next day, you'll find it really didn't do too much.

Unless your on 1200 calories a day for a serious health issue, it really won't hurt.

Here's what I've decided on:

Deviled eggs made with fat free mayo (1/2 egg = 50 cal)
Rotisserie chicken (160 cal)
Mashed Cauliflower (90 cal)
Brussels Sprouts (65 cal)
Hungry Girl Apple Pie (140 cal)

Total: 505 cal. I'll go over a little bit, but it won't break the bank :)
