I'm curious, because I just started having 'prep days' a few months ago and it's been a huge help! Also, having a prep day came up recently in response to a good question, and I thought it might be something other people are interested in as well. I'm wondering if there's more I can do, or something new/interesting to try and I'm stumped. So, for those of you that have a 'prep day,' what do you make? Any tips/tricks to share?

(('prep day' - for anyone unsure of what this means - it's a day of the week where you prepare some food for the coming week. Like those 'munchables bags' of sliced veg, frozen grapes, sliced ham, etc.))

To start the thread off (and answer my own question), every Sunday I try to make a jar of spicy hummus, medium-heat salsa, a huge batch of plain rice (this week it's red, usually it's wild or brown) and one soup that I'll freeze in single-serving containers. Last week and this week, it's been a ginseng turkey soup. Also, when I run out of kaktugi (a radish kimchi/pickle) I'll make a new batch of that as well on my prep day (thanks to maangchi's recipe).
In the past, I tried making coleslaw and all kinds of pasta salads, but I just wasn't eating them.
Tip: To make sure I enjoy (meaning, I have time for) my prep day, I make sure that it's a day when I have the apartment mostly to myself. I also get a wrap from my local schwarma place to eat instead of cooking for that afternoon. It's a healthy treat and (I think) a good trade-off for spending 1/2 the day in the kitchen.
