Despite changes, not loosing weight

First off I apologize if this is posted in the wrong section, I am new here so please feel free to redirect me to the right topic section

About me: I am a 22 male college student. Over the past three years I have ballooned from a toned 180 lbs to a beer belly 240 lbs. Starting three weeks ago when I moved back home for the summer I had some major life changes. In school I was drinking heavily 5-6 nights a week, eating wings, pizza, mexican food and other college essentials daily, all while sitting on my butt all day either studying or in class. The most physical activity I was getting involved walking to class or to the bars. Now that I am home for the summer I am working construction 50+ hours/ week, drinking at most one night a week (and not at nearly the same level), and eating three square meals a day. My family is largely gluten free due to recent diet imposed on my father by a doctor for a non-weight related issue so my dinners are usually rather healthy, my breakfasts light, and my packed lunches healthy and limited to purely what I put in my lunch box.

For instance my diet today was a fairly typical day

Breakfast

Half a ham sandwich

Banana

Black Coffee

Lunch:

Ham sandwich

Handful of each: pretzels, carrots, and almonds

Banana

Fat-Free pudding cup

Dinner:

Gluten free butternut squash ravioli

Steamed broccoli

Bowl of mixed fruits

I drink at least a gallon of water a day during work, and while at home I usually drink unsweetend ice tea or skim milk

Despite these drastic changes to my daily activity and diet I have not lost any weight over the past three weeks. My body weight will vary about 4 lbs per day depending on how much food I ate, how much water I lost due to sweat, and at what time I weight myself, but has consistently stayed between the 238-242 lbs range. While I conceed that I am surely building some muscle due to the nature of my work I do not understand how I am not loosing weight overall. Based on what I have been able to determine it seems that I would need to have a net caloric intake of about 3500 calories/day to be maintain my current weight but I do not see anyway how I would be consuming that much due to my decrease in caloric intake and increase in expenditure. The only thing I can think of would be a low metabolic rate due to my tendency at school to eat only one or two large, unhealthy meals a day with large periods of no food in between, but I think that three weeks of a consistent three square meals a day would have reset my metabolism by now.

If anyone has any advice or suggestions it would be much appreciated.

Thank you

don't be too concerned about your weight. If you want to see what kind of progress your body is making, track your dimensions, waist, hip, biceps, etc. That's where you should really be seeing the difference. You won't notice the changes in the mirror, on a daily basis, but the tape measure should.

Be aware of any drinks that you are having ... juices and alcohol contain a lot of calories that people often ignore.

Having too many carbs and not enough protein. Also, you might be putting on muscle mass through your construction work. Check your body fat % estimate and keep a track of it. It is a better indicator for body fat composition change.
