Sport Desperate help needed please

Hello all,
I'm a 26 year old male, 6ft 1, and currently let myself fall completely out of shape, weighing 15 stones (210lbs). I used to be an active boxer and in good shape, but lost dedication and stopped training 2 years ago. I am a guy who loves his food, so it will come as no shock that i couldnt stop putting weight on. Idecided to diet when i hit 15 stone at the back end of last year. I managed to drop to 13 stone 2 (which i was extremely happy with. Although i wasnt really toned or ripped) just from dieting how i am now and a bit of swimming. After christmas i started just eating as i pleased again and ballooned up again until i hit 15 stone again. So now i started eating healthy again and signed up to a gym. Gyms have never really interested me before, and i found them borig and repetative (i pressume due to the boxing). But i want to lose the weight this time and keep it off, as well as tone up. However, although ive been dieting for3 weeks now, and going gym 2 weeks, I dont seem to be losing any weight at all.
I do get a bit obsessed whilst dieting and weigh myself every day, and this is why i get disappointed :)
Due to my work and young family commitments i have a quite hectic schedule and sometimes not my desired training times.

On mondays and wednesdays i can only train at 8pm. And worse, tuesdays its 9pm.
Other days are around half 5- 6pm i start. Then i do sat morn too. Sunday i rest. I know these are crap times, but i really have no choice.

This is an example of how and what i normally eat through week. and then sundays i normally just eat a treat meal or something too.

7:30 am- i eat oats so simple cereal with just a splash of milk. And sometimes a protein shake too (CNP propeptide)

10:00am- i eat a banana, and have a meal replacement shake (CNP ProMR)

12:30am- I eat a full tin of tuna, lettuce and cucumber on 3 slices of brown wholemeal bread. With a splash of low fat salad cream.
And a protein shake (CNP Propeptide)

3:00pm- An apple. Or sometimes a small baked potato with low salt heinz baked beans

5:15-5:30pm- Dinner- eg. perhaps chicken breast with pasta, Or sirloin steak with veg and a few boiled baby potatoes, or spaghetti bolognese

I know im probably doing all kinds wrong. But i have tried to look up eating plans and things, but im admittedly clueless.
Someone please help me with the best option for my hectic lifestyle.

Hey leighman, consider that sometimes it is not what you are doing but, what you are failing to do. By this I mean that there is more to working out, toning and getting in shape than just running on a treadmill and lifting weights. Let me introduce you to a new way of looking at working out and training. You see, sometimes what is out there is not enough. Try doing what I call Breath Moving Workout. Let me let you in a little secret, like most people you are probably completely ignoring the life and vitality giving force of your breath. You are probably not taking advantage of the infinite supply of oxygen that is all around you.
By working out in a way that focuses on breathing in more of the oxygen you encounter a host of benefits that are lost by doing the conventional workout, because you cannot breathe in and retain more of the energy/oxygen if your breath is rushing in and out. By working out in a way that allows for deep extended breathing, the extra oxygen will burn excess fat more efficiently? You will also have more energy and therefore probably require less food. These are just to name a few, other benefits are that deep breathing releases toxins, improves the blood quality, strengthens the immune system, improves cellular regeneration and so on, to many to name here.
Do this, begin by conditioning yourself to do deep abdominal breathing, then take a good quality resistance band and mesh together the resistance with the deep abdominal breathing. When these two are set in place your attention on following your breath. This last step will turn your workout into a meditation, for you see only when the body is motionless and the mind is tranquil can you absorb more of the Chi, Prana or as we call it here in the West the Vital Life Energy. By the way, working out this way is more efficient and therefore requires a lot less time.
