Sport cooked vs uncooked meats (calorie q)

So for 10 oz of buffalo, cooked, we get:

405 cals
6.9 fat
80g protein

Now uncooked we get:

632 cals
45.2 fat
52.9g protein


I was under the impression that the calories and protein content would stay the same, with cooking only removing excess water and a little bit of the fat?? Call me confused, can someone explain what happens to the meat after it gets cooked? Thanks

Nothing happens to it.

It still has the same macro properties cooked as it did when you measured it raw. All that changes is the weight.
 
You can measure cooked or uncooked, it's up to you....

Let's take a 4oz piece of raw chicken breast and say the macro breakdown is 25/2/0....p/f/c. You bake for 30 min, take it out and measure it again. You'll notice that the cooked meat will weigh less than the meat in raw form however the macro properties will remain the same.

However you want to measure it is fine but just remember the macros for a 4oz piece of raw chicken equate to about a 3oz piece of cooked chicken.
 
Essentially that 10 oz of Uncooked buffalo meat loses it's water content and shrink, like most men's penis tomorrow. If you BBQ hamburger patty or steak, you will noticed that it shrinks and get smaller so that 10 oz buffalo meat after being cooked might be like 8 oz.

In your comparision it was more like 8 oz buffalo meat, once the uncooked meat is cooked (the uncook) vs 10 oz buffalo meat cooked.
