Chicken

I know many ways to fix this beast....but I'm bored with all of them.

Please throw me some ideas... I feel a cooking stint coming on.. lol :)
 
not too terribly exciting but.......

my favorite are boneless breasts covered with Pampered Chef's (no I am not a rep.) Southwestern Seasoning on the Forman grill. The leftovers are awesome cut up cold on a salad the next day too. Feel like sharing your favorite??!!
 
One of my favs is to take a whole bird and slow cook it like a pot roast.

I'll take a sprig of fresh rosemary and put it in the cavity along with a few (3-4) cloves of garlic.. a little sea salt, fresh cracked pepper & a sweet onion. Add chopped carrots, small new potatoes and a bit of celery and slow roast it.

MMMM tasty :)
 
I throw raw chicken in a boiling pot with veggies.

I'm kinda like you. I'll throw chicken tenders into a frying pan with vegies (broccoli, red peppers, zucchini, etc) season it and fry it up! WITHOUT OIL! usually just a touch of fat free chicken broth and a little water. :D
 
I mostly grill or smoke my meat. I have a nifty little vertical smoker, propane fired. I'll toss pork shoulders, bone-in chicken breasts, and a 12 lb brisket on there at 10pm, and get up at 7am to freshly smoked meat (ok the chicken only stays on 2 hours usually...)

My smoker is one thing i wouldn't allow to go into storage during our house selling (i.e. right now).

so, allow me to add value to this thread and make up for it.

Take skinless chicken breast, put into glass pan with a 1/8 inch of olive oil, then smother in citrus (sliced lime, lemons, and oranges) back until done. Leave the peel on the citrus.

take out of oven, lightly sprinkle with cyan pepper, and yumi-licious.

Crushed and blended home grown tomatoes, red onion, Basal, Green peppers, and a little lemon (for sauce), LGB-rice, and cooked and chopped chicken breast. Then covered with Parmesan.

Can't believe you went there...can't believe I followed ya! Bad influence FF, bad influence! :D

Men's Health just published an issue that claims "go ahead and have the dark meat when it comes to chicken"...at only 1 gram more fat, it's worth the flavor and there's some beneficial compounds that you don't get with that dried-wood white-meat.

BBQ is always super-tempting, but let's face it...smothering with Bullseye or Baby Ray's may taste devine...but it's chalk full of sugar!

Jamaican Jerk chicken is flavoricious and I'm sure more then a few guys on this forum are down with jerkin' their chicken as well. Some of that buffalo wings sauce can be fun too. But whatever you do, honor the chicken and do it right....it's soul can only cross from this world into the next if you do it right and cook it on the grill.
 
well I am dredging this up cause I have a recipe to share that I came up with recently:

Chicken "Tunafish"

8 chicken tenders
1/2 cup fat free Caesar salad dressing
1 red bell pepper
1/4 cup strips of cucumber

I took 8 frozen chicken tenders and seasoned them but didn't use any oil just seasoning (i.e salt, garlic, pepper...etc) and grill it or cook in a dry pan. Put aside.

slice the red bell pepper into strips and do the same with the red bell pepper.

Take the cooked chicken and shred all of it with a fork. Place in bowl. Add the salad dressing and then with a soup/hand blender blend it *a little bit* to the consistency of tuna fish. mix it again with your fork as it should still have some shredded parts to it.

I divided it onto 5 amounts, wrapped it in lettuce with some bell pepper, and cucumber last night.
Per serving:

Calories: 134

Fat: .5g
Carbs: 17g
Protein: 13g


You can also make a sandwich with it and top it with the bell pepper and cucumber, or wrap it with seaweed, or lettuce, or even stuff it into a raw bell pepper! I stuffed it into a half a bell pepper today.....yum :D

Thanks I have another one that is more creative and *very* tasty, but it is also more work, so once I type it out I will copy it here :D

I do the same with leftover chicken, in fact I usually cook an extra breast when I do just so I've got extra to throw into salad the next day :D

I LOVE making grilled lemon pepper chicken. And no- not from the seasoning alone :) Toss the extra in a salad with a nice vinagrette, and you've got a helluva lunch.

I also make a mean stir fry. I usually use some sort of teriyaki sauce for the chicken and throw in broccoli, carrots, water chestnuts, snow peas, and whatever else I feel like using. Cook it up and slap it over some white rice. Always comes out tasty.
