I purchase a yummy new tortilla that is white, low-carb and lo-cal. It has 110 calories and 11 grams of fiber. I spread Laughing Cow Light on the tortilla and cover it in veggies. I then fold it in half like a quesadilla and spray it with olive oil cooking spray. You cook it on both sides until the cheese melts. It doesn't take long! This has 145 calories!
 
Give me some cheap easy healthy recipes for dinner that a novice cook can make.

Cooking really isn't complicated... check out your local library or bookstore for the cookbook section (it's a good place to pick up girls too :D

Rachael Ray, while completely annoying to listen to, has a bunch of cookbooks that are limited ingredients, if you watch the amount of oil and cheese being used, are simple to prepare and are done quickly.

CHicken breasts, marinated in your favorite salad dressing or spice rub, then baked in the oven - are about as simple as you can get and relatively inexpensive...
 
in a frying pay spray some PAM (or a foreman grill in my case) and sautee some chicken after a couple minutes add some frozen vegetables (spinach or i love the pea corn string bean carrot mix) and serve over brown rice. add some garlic herb seasoning for taste!

another favorite meal of mine now is cottage cheese with fruit in it (i use sliced fuji apples)

This gave me a good idea and it turned out pretty well. I bought whole wheat tortillas (also 110 calories), garlic hummus (50 calories for 2 tablespoons) and spread the hummus on the tortilla. Then I microwaved some frozen diced chicken and wrapped it up in the hummus tortilla. Yummy, lot fat, and lots of protein.
 
Heres the one that made the difference for me...

Fresh veggies: ie, potatos, tomatos, carrots, onions, green peppers, etc
Some fresh or dried pinto or kidney beans.
Fresh chunk of lean chicken, beef or pork. Boneless.
A pinch of salt, lots of pepper or cayenne.

Chuck them all in a crock pot or pressure cooker..... cook for all day in crockpot or till ready in pressure cooker. (can also slow boil on the stove top of course)

Done!

Thats my dinners for the week!

Very straight forward, very easy, very simple to modify, and DEEEEEELICIOUS!
