Breakfast Low GL, Brain food?

I'm trying to lose weight. I'm trying to stick to Low GL meals, including at breakfast but I have two questions regarding this.

1 - For breakfast is it important to have a high GL or a Low GL breakfast? I understand the insulin response facts in detail but I don't seem to be getting enough energy from my Low GL breakfast. I have three eggs and 3 tomato's and a carrot for breakfast. Still no energy and can't concentrate. The only way to concentrate during the day is to have a banana with my eggs, but a banana every morning makes me gain weight. I've been tested for diabetes and there's not sign of it or insulin resistance. Do I simply need to eat allot more for breakfast to charge up properly? How much should I eat for breakfast? Just remember, I'm trying to keep weight down and I have a condition similar to Reactive Hypoglycemia? Could it be caused because I'm not eating enough?

2 - I can't have FODMAPS or any starchy foods. No Grains / rice etc. I have some Gluten intolerance damage so these foods aggravate my stomach villi. In this case I can have banana's but they're making me fat. Can anyone suggest to me what else I could have for breakfast in this case. Nothing synthetic like pasta etc
