Sport Beer Belly :-(

I've been working out with weihts for about 4 months now, and have seen significant improvements in my strength if not the same level in size increase. But as such I decreased my cardio work, and now becuase of my OK but not great diet I have developed a ring of fat around my lower belly (I can pinch around 1.5" of fat around my belly button).

So I have decided to start cutting in an attempt to lose some fat and get more muscle defenition (I'm convinced I have the muscles, but there is just a little bit of fat sitting over them).

So this week I have had......

Breakfast
Porridge oats with 50:50 water and semi skimmed milk with a handfull of summer berries (I have had this all 4 days this week)

Lunch

Monday - A cup of diced roast pork (left over from Sunday lunch), banana, apple, low fat yoghurt
Tuesday - Apple, Banana
Wednesday - Half a Roast butternut squash, banana, low fat yoghurt
Thursday - Turkey Salad, apple
Friday - Chicken salad - low fat yoghurt, apple

Dinner

Monday - Grilled Salmon Salad.
Tuesday - Chicken & cherry tomato pasta bake (home made no additives)
Wed - Lamb hank, with gravy, boiled potato's, green veg (My cheat meal)
Thur - Chicken salad
Fri - Home made Thai style prawns with brown rice.

I also went to the gym on Tue, Wed & tonight. Tues & Wed I burned over 950 calories according to my heart rate monitor.

I think I need around 3500 calories per day, and at present am falling short of this (which is good?). I'm 5'10 and weight 162 pounds. My BF is around 15%

Any input would be greatly appreciatted. (Sorry for the long post)
