The one legged squat, a.k.a the pistol is a great exercise which I have been using a lot in my workout programs.

Yeah that one is really hard. You have to actually work up to that.
I also like Single Leg Supine Hip Extensions. Great for Hams/Glutes.
Glute Ham Raise is very difficult from what I have seen/read, though never tried it because I don't have the equipment to do so.
Single leg calf raise is pretty good too.
If you really want your hams to feel it, substitute the bench with a half bosu. You hamstrings will go crazy trying to stabilize.
