Weight-Loss At a loss for dinners

Ok I love chicken and turkey but not everyday. I am following a low fat diet but I hate fish unless its fish fingers or battered cod. This week I have had 2 dinners of chicken with veg, one turkey and the rest weight watchers lean meals. Are they ok to eat so often. Some of them are easy to eat and some can be very dry. What else can I eat. I am at loss every day what to eat for dinner. I know about salad and veg but what else??????
Can I eat veggie soup from a packet or would that be processed and full of fat.
Can I eat an omelette even once a week
Can I eat battered cod with potato and veg
Would these be high in fat. I am looking for a long term diet that I can stick to so I dont want to be living on weightwatchers lean meals.
 
A few suggestions to give you some variety...
I enjoy putting a bag of salad mix in a large bowl and adding a can of tuna or canned chicken along with some sliced olives, lite Italian dressing, and a handful of croutons. It's good and surprisingly filling. Try changing it up with different dressings, cheese, etc, just not too much!
A simple chicken stir fry can be good. Cut boneless chicken into bite size chunks and stir fry them with a little olive oil, garlic, and fresh or frozen vegetables. I have found some great stir fry sauces out there...just look out for the sodium in some of them. If you use a pound of chicken, a bag of frozen stir fry veggies, and make 2 cups of rice, you can get a few meals out of it.
I have also been using ground turkey breast in place of ground sirloin to make soft tacos.
Eating healthy doesn't have to be bland an boring! I, too, have a stash of Lean Cuisene and Weight Watchers frozen meals, but those are for when I get home from work late and don't feel like messing around with cooking. Good luck!
