Am i excercising enough?

Hi everyone im adam and im currently 18, roughly 6"4 tall and weigh just under 100kg (used to weigh 128kg :O). I've successfully lost weight (duh) and am wondering whether or not im doing enough excercise at the moment to continue weight loss and fitness gain. To give you an idea on my diet and excercise, this would be an average day for me:
Breakfast - sultana bran w/ 2 bananas and low-fat milk
- coffee w/ 1 tsp of sugar and low fat milk

lunch - either eggs on toast (poached) (multi grain bread - no butter or margarine) or something similar like baked beans or just toast

Inbetween meals - 1 or 2 coffees/fruit (mainly apples and bananas)/ marmite sandwhich

Dinner - varies but nothing too fattening

Excercise: currently i live with my father and mother 1/2 the time each and at my fathers i do this each night:
Walk up and down the hill we live on (probably power walking? i dont walk slow) the walk, with my stride, takes about 40 mins non stop and is fairly uphill.
After this i do the same on my mountain bike straight afterwards non stop also (i do bike up the hill)
At my Mothers: The same routine but possibly a little less strenous as is a fairly flat road aside from the end bit that is quite uphill, but yeah same thing, 40 mins walk then the same on a bike.

Now i'm thinking of doubling this routine, repeating it in the morning.

I sometimes get quite tired as is but not often.

What do you guys think? will it be enough?

I should drink more water shouldn't i?

Yes, you definitely should be drinking a lot of water if your goal is weight loss.

As for your diet, you make no mention of vegetables. Cooked veges and or salad should be a mainstay of your diet.

For the training, what your doing sounds fine for cardio work. I'd also work in some bodyweight training every second or third day, for example

arms: push ups, pull ups

core: plank (front and side), crunches

legs: squats, lunges

do 3 sets, of however many repetitions you can manage without knocking yourself out. Doing this kind or training will help you maintain your muscle.

or, if you have access to weights or a gym then pushing some iron is another option.

Take one or two rest days a week, with as little exercise as possible. This is important

Yeah sorry forgot to mention veges. Thats a complicated one, dads girlfriend is vegetarian so we practically live off veges while im there and my mums is almsot the opposite with the exception of maybe 2/5 of the rdi each day contained in dinners?
I'll definaetly start drinking more water but the gyms a tough one due to my location (rural half the time and up a massive hill the other half). I don't currently have a vehicle either.
Do you think I should be doubling the routine? and to be honest i never take a "lazy day" because aside from the excercise i dont get out much as is and sit around/do little excercise during the day anyway.

The exercises i mentioned above don't require a gym.

As for doubling your current routine - If you feel you can do it then just do it. No one else can really advise you about how much cardio you should do (except maybe your doctor), just listen to your body.
