I went to my local Wild Oats store this weekend and they had some homemade energy bars made primarily of ground nuts. Anyway it was sweetened with agave nectar. I believe this is what is fermented to make tequila, but I never heard of using it as a sweetener. I bought all the ingredients and noted that the label said it was low GI. I looked it up and one site had it listed with a GI rating of 11.
Does anyone use this? Sounds pretty cool to me, although I'll still use it very sparingly since it's still an added sugar
